Is there a specific reason why most fighter jets have the control panel between the pilot's legs and not on the sides like Airbus planes? I know the F-16 has side struts, but most of the others have a center.

Most current generation fighters have switched from center stacks to side mounted sticks. Almost all American fighters have a side stick. In Europe it's a bit of a mixed bag - the Typhoon (and Gripen) have the center sticks, while the Rafale has a side stick. The Russians stuck to the middle tree in the T-50.
